mm Bossie Cheddar

This cheese is named after the term that we use when calling the cows in for milking or any other work. We stand out in the pasture and call “mm Boss” over and over as loud as possible to get the cows attention so that they will come up the barn yard. This cheddar has the traditional cheddar flavor to it along with a fullness when being eaten.

Ravine Colby

This cheese is named after the ravine that runs right in front of the farm yard. Why is this ravine of any significance? Paulding County is a very flat county and the ravine that runs into our property is the largest naturally occurring hill in Paulding County. Ravine Colby is a nice mild cheese that has a nice moist texture to it.

If you are looking for a soft mild cheese that complements well with a lot of cooking, The Jack is the cheese that you would be interested in. Jack is the base cheese that I use in all of my flavors.

Miami Erie Canal Swiss

The Name: Miami Erie Canal was one of two canals that met in Junction Ohio. This was once a booming town with much importance to the local economy. Miami Erie Swiss is a more traditional tasting swiss. It is a complex tasting cheese as different aspects of it express themselves at different times when enjoying it.

Name: Wabash Erie Canal was one of two canals that met in Junction Ohio. This was once a booming town with much importance to the local economy.  Wabash Erie Gruyere is a smooth, mild cheese that has a slight nutty flavor to it.

The name Black Swamp Gouda comes from what our land used to be. It was at one time part of the Great Black Swamp. The swamp covered an area in Northwest Ohio that was approximately 120 miles long and 40 miles wide. Smooth, creamy, mild, and it changes with the seasons is how to describe this cheese.
